Chocolate Souffle Cupcakes

I made the cupcakes for a co-worker's birthday.  I ask everyone what their favorite desserts are and I try to cater to that for their birthdays.  His is a chocolate souffle from a local restaurant.  This was the best I could do.  
They were amazing after a few seconds in the microwave (even better straight from the oven!)  The coffee infused whipped cream was a wonderful addition.  Thank you Zoe!

The basic recipe comes from page 393 of Carole Bloom’s The Essential Baker
Makes about 48 mini cupcakes or one 9 1/2″ cake (I used regular cupcake tins)
6 ounces unsalted butter
1 1/2 cups heavy whipping cream
1 cup coffee beans 
1 pound bittersweet chocolate finely chopped
2 teaspoons pure vanilla
1/4 teaspoon salt
6 extra-large egg whites, at room temperature
1/3 cup granulated sugar
6 extra-large egg yolks, at room temperature
1/3 cup granulated sugar

Preheat oven to 350 degrees
Prepare a 9 1/2-inch spring form pan or mini muffin tins with butter, set aside. (I used cupcake papers)
In a small sauce pan heat the heavy whipping cream and coffee beans over low heat until simmering. Remove from heat and let sit for at least 15 minutes. The longer you allow them to steep the stronger the flavor.

Strain the beans from the heavy cream through a fine mesh sieve.

Take out 1/2 cup of the cream for the cake recipe and refrigerate the rest for the garnish.

Heat the 1/2 cup of cream and the butter together in a medium sized sauce pan over low heat, just to a simmer.

Once the butter is melted turn off the heat and add the chopped chocolate. Stir gently then cover the pan and allow to sit for five minutes.

Gently whisk the cream and chocolate together.

It should be nice and smooth with no lumps of unmelted chocolate. Set aside and allow to cool slightly.

Meanwhile whip the egg yolks and 1/3 cup of sugar together for about 5 minutes.

They should be pale in color, very think and able to hold a ribbon on the surface when you hold up the beater and allow the mixture to fall into itself.

Gently fold the whipped egg yolks into the chocolate mixture.

Using a rubber spatula to combine them gently. Set aside.


Whip the egg whites and 1/3 cup of sugar together, until they reach stiff, but not dry peaks.

In three additions fold the whites into the chocolate mixture.

Working gently so as not to knock all the air out of the whites. This is what will cause your cake to soufflé.

The mixture should be shiny, smooth and light in texture.

Pour into cake pan or scoop into muffin tins.

You can also use cupcake papers.

Bake for about 20 minutes in mini-muffins (35- 40 minutes for 9 1/2-inch cake pan) or until the cakes are set and slightly cracked on the tops.

Let the cakes cool on a rack for 5 minutes and then turn them out of the muffin tins. If baked in the spring form pan then release the sides.

Whip the coffee scented cream with 2 tablespoons powdered sugar until stiff peaks. Fit a pastry bag with a star tip and pipe the cupcakes with a generous amount of the cream.

Gray Areas

In several of my bible study groups we have been talking about "gray areas."  The issues in the bible that are not clearly stated.  They are left up to our personal conviction.  i.e. drinking, being vegitarian, not watching R rated movies, etc.  
Be we tend to judge brothers and sisters if their conviction on a matter is different from ours thus driving walls of division between us.  
We read Romans 14 the other day.  Wow, does that clear it up.  Paul says if I believe that X is wrong, through Holy Spirit conviction, then I am not to do it.  But if you do X and you believe, through Holy Spirit conviction, that is it right, then you are to do it.  I cannot judge you and you cannot judge me.  
I like how the New Living Translation puts it...
Blessed are those who don’t feel guilty for doing something they have decided is right.  But if you have doubts about whether or not you should eat something, you are sinning if you go ahead and do it. For you are not following your convictions. If you do anything you believe is not right, you are sinning. (Romans 14:22b-23)
These gray issues are ones we must wrestle with personally.  If you have to justify it, or if you are not sure, DON'T DO IT.
Wow, thanks God for making it so simple.  Ha ha.  The more simple it is, the harder it is for me to follow.  All God asks of us is to "Love God.  Love People."   Easy peasy...right?

Weekend

Ahhh, the weekend.  It was wonderful.  It started off with a date with dad.  I took him to see Jim Gaffigan as a father's day present.  Hot Pockets!  It was great.

Saturday morning my two dear friends picked me up and we went to the Survey Cafe.  This is my new favorite place.  They make THE BEST caramel macchiato that I have ever had.  This cafe uses all eco friendly cups and to-go packaging made from corn.  They feature organic shade grown coffee and espresso.  The cafe is in a historic house in historic Bonita Springs.  

This morning I stopped in on the way to work for a muffin and a macchiato (the caffeine hit me hard!  I am shaking from it!  But i'm also being very productive at work!)  I even ordered a veggie wrap for lunch that i'm going to dig in to in a few minutes here.  Yum!

On Saturday I went to a local resort to celebrate a friends birthday.  We had a great time sitting by the pool, going out to dinner, having a fashion show at one of the stores, and swimming at mid-night.  On sunday afternoon we experienced true Florida.  We were out by the sunny pool and we saw some dark clouds start to form.  10 minutes later it was as if a category 2 hurricane had hit.  The wind was howling and the rain was coming down in horizontal sheets.  We couldn't get inside fast enough!  Nor could we open the door.  So we sat inside and waited for the storm to calm down and then we headed home.  Oh blessed Florida weather.

One more quick story.  I stopped in to Marshals to grab a few things after work last night.  I ended up shopping for about 1/2 hour and then I think i spent another 1/2 hour in line.  Once I finally got up to the cashier I reached into my purse to find my wallet missing.  Gar.  It was thankfully at home, so no worries there.  Just a little frustrating.

But today is wonderful.  Yoga to wake me up, caramel macchiato and muffin from the cafe, and some Jesus time at work.  It's a good day.

Back to the Blogging world?

Well, i spend much time reading other people's blogs, but I don't really blog myself.  I guess now is as good a time as ever.  I'm just sitting at my desk surrounded by files.  I took a break for a snack.  It's 11:00am and I'm hungry already, but what else is new.  My lastest update on life is that my ballet recital is over.  Sad.  I had a blast though.  I always love the stress, adrenaline, and drama of performance day.  There's always something!  But it all went very well.  I have two weeks off ballet before summer classes.  I thought I would have a ton of free time but I am just as busy as ever.  I like being busy though.  I could cut some stuff out of my life but I like it all.  
I'm looking very forward to seeing Jim Gaffagans comedy show tomorrow night with my poppy.  I'm going to pick pops up from the airport and we are going to have a dinner date and go see the show.  It's an early fathers day present (hot pockets!)



this weekend I am spending at the beach...i live 8 miles from it and never go.  A sad state of affairs.
Next weekend is camping at the springs and a mewithoutyou concert.  HAPPY!

Peter stepped from the ship to the sea...

"Why did you doubt me?" - Matthew 14:31

Jesus called Peter to join him on the water.  Peter steps out on the water, takes a few steps, and begins to sink.  He freaked out.  Peter kept his eyes glued to Jesus and trusted him enough to step out on the water.  But then he had second thoughts and started to go down.  He yelled "Save me Lord!"
Jesus asked "why did you doubt me?"  Jesus had proved himself over and over again to Peter, but Peter still let his circumstances (wind and waves) to distract him.

Hmmm, this is just a story.  It has nothing to do with my life.  NOT!  What has Jesus done for me?  He has been faithful.  I should know by now that I can trust his heart.  
I can keep my eyes glued to his and take the scary step out onto the waves.  I can even take a few steps, but if I look around me at the wind and waves and lose his gaze, I'm going down.  

I love how Jesus immediately reached out a grabbed him.  Then he asks the question, "Why did you doubt me?"  Can you imagine what Peter said next?  i bet it went a little like "well, i, uh, I, errr, uhh, waves, mmmm, I, You, uh...."  I bet Jesus simply hugged him at this point.  I think Jesus is slightly humored by our stupidity sometimes.  (I'm sure it's frustrating, but a little funny too)

How I wish I had been there.  Of course I would have been one of the other guys hanging on the boat for dear life.

Summary - through the scary parts in life keep your gaze locked with his.  If you do falter simply call out to him and he will IMMEDIATELY reach out and help you.

I feel like this is the state that we are in today.  Our dreams are coming true.  Our prayers are being answered because we are praying safe.  Dare we ask God to do the impossible?  


What is my dream?  Is my dream to be married, have some kids, and live a long life?  Well, yes.  Will it come true?  Probably.  


DREAM BIGGER!!!


What should my dream be?  To make a difference in the world?  Um, yes.  It seems like a canned response but it's what my dream should be.  My dream is to live like Christ.  To exhibit the kingdom.  To love like He loved.  


My dream should not be about position or material gain/comfort.  My dream should be an unatainable goal.  Dream big.


What would it look like if every Jesus follower took on this substantial dream?  Christ's love would come pouring out of us.  It is contageous.  Jesus always had people (read: sinners and tax collectors) following him around.  There was something about Him that was captivating.  He did not judge.  He did not rebuke them.  He loved them.


Can love really change the world?  Yes!  How do I start?  By loving.  Love is epidemic.  


My dream is to love as Christ loved.

The Evolution of a Blog Name

This blog has been in my thoughts for some time now.  I have a cooking blog but I rarely post on it and I feel strange posting everyday thoughts on it.  I have been wanting a generic blog that I can post food, crafts, thoughts, and gripes.  So then I came across the hurdle of naming the blog.  GAHHHH, it seems so easy to everyone else in the world.  I needed a name that would encompass everything without simply being "Sarah's Blog" or "My Thoughts."  I'm not that boring.  I promise.

Yesterday I was determined to come up with a name.  I had settled on Odd Mosaic.  Many different interests in one place.  It was great.  But I didn't love the sound when I said it out loud.  It would do.  But I waited.  

Then I sat down to watch a film festival movie called The Last Romantic.  In the first few seconds of the movie this guy is walking down the street saying "I'm a poet, I go well with coffee, I am a romantic" etc.  The list went on but I didn't hear it.  I paused the movie and said to Sareece, "That's the name of my blog."
